This recipe is perfect on a cold day. Warm and comforting, this dish hits the spot. Plus, the ingredients are easy to keep on hand for a quick dinner or side dish. The recipe was designed by my partner’s mother who has made this delicious soup for decades.
Ingredients:
1 cup lentils
2.5 cups of water
4-5 cloves of garlic
1 medium onion, white or yellow
1 tbsp tomato paste
2-3 bay leaves
salt, pepper, and oregano to taste
1 tbsp vinegar, white
Directions:
Heat all of the ingredients (except for the vinegar) in a medium pot. Bring to a boil. Cover and simmer until the lentils and garlic are tender; stir and add water as needed. Add vinegar and stir.
For those of you familiar with Traditional Chinese Medicine: This recipe treats qi or food stagnation in the middle jiao. The majority of the ingredients harmonize and strengthen the middle. Although the recipe is generally warm in nature, it also clears heat and toxicity. This recipe also helps treat SP/ST qi deficiency.
